Biltong is a South African-inspired charcuterie produced by cool air-drying marinated slices of beef steaks.
Biltong is derived from the Dutch word Bil (meaning rump as in rump steak) and Tong (meaning strip or slice). So basically, it is a direct translation of rump steak slices.
Blok is the Dutch word for block as in cutting block. Why all the Dutch words you ask? Because biltong was invented as an all-natural and simple meat preservation method in the 17th century when the European (mainly Dutch and French Huguenots) seafarers settled in the “new world” in Southern Africa?
Biltong is made by marinating slices of fresh beef steaks in vinegar, salt and a spice mix the acidity of which eliminates any bacteria on the meat and imparts an amazing flavor. The meat is then rinsed with a dilute solution of the vinegar/spice mix and subsequently coated with fresh spices and hung to dry for up to 18 days using controlled cool air movement.
Biltong is freshest when consumed within 3 days of opening the bag. It is not harmful to the product but it is much better to eat this universal snack as designed and that is in its freshest form. When we make biltong we can control the humidity and moisture of the air all through processing and in the pouch giving you the best product possible.
